Can someone clarify a bit how exactly the conversion window works? If I stop the experiment will conversions still be counter for the period?

The experiment start/end date controls which experiment assignment events are counted. Metric conversion windows extend additional time for conversions to happen. So if someone first enters a test on Jan 1st and the conversion window is 3 days, they will have until Jan 4th to convert. And that conversion will count even if you stop the test on Jan 2nd.
