From what I’ve seen, Segment -> Snowflake or BigQuery is probably the most popular. A lot use Mixpanel too. There are some alternatives to segment, like Rudderstack, or Jitsu.

11/07/2022, 7:55 AMSo the data lake part we're ok with. Probably use aws Athena or similar. It's the tracking bit we're deciding on. Think you can use the snowplow tracker without snowplow with some tweaking.
